I was not exposed to brussels sprouts growing up and somehow had the impression that they are extremely bitter and not the best tasting vegetable. But I think it’s because I just haven’t had charred brussels sprouts coated with balsamic vinegar and crispy bacon.
My mom decided to make this recipe one fine day, and my impression of brussels sprouts changed COMPLETELY. So here is my life changing brussels sprout recipe! If you’ve never tried brussels sprouts, I hope you give it a chance and try this recipe out!
Recipe
Servings: Makes for 3 – 4 pax
Cooking Time: 30 mins
Ingredients
- 500g of Brussels sprouts
- 4 strips of streaky bacon
- 1 tsp of chopped garlic (approx 2 cloves of garlic)
- 2 tsp of Balsamic vinegar
- 1-2 tbsp of Water
- Parmesan cheese
- Salt, pepper
- 1 tbsp Olive oil
Steps:
- To clean your brussels sprouts: remove the outer layer of leaves, cut the bottom stem off, and slice the larger brussels sprouts into half. Rinse the brussel sprouts with water and dap them dry with a paper/kitchen towel.
- In a pan on medium heat, drizzle some olive oil and place sliced bacon onto the pan. Let the bacon crisp up and turn brown on one side, before flipping it over. Once the bacon is crispy on both sides, remove the bacon from the pan and set aside.
- In the same pan, drizzle more olive oil, turn up the heat to medium high and toss in the brussels sprouts. Do not touch the sprouts, but let the side facing the pan get charred before flipping them up. Let the sprouts get charred on all sides.
- Toss in chopped garlic and stir fry for about 1 min to get the garlic crispy.
- Add some water to the pan and cover the pan with a lid for about 3-5 mins. This helps to create steam and cook the insides of the brussels sprouts.
- Remove the lid, add salt, pepper, balsamic vinegar and toss in the crispy bacon. Mix everything together until well combined.
- Garnish with grated parmesan cheese and enjoy!
