Pasta pomodoro is a quick and simple dish, which only requires a few main ingredients, fresh tomatoes and basil. Pomodoro means “tomato” in Italian, so this is literally pasta with tomatoes!
I cooked this dish for the first time in an airbnb while holidaying in Switzerland. I don’t typically enjoy cooking while on holiday but the tomatoes, basil and burrata cheese looked so fresh at the grocery stores that I just could not resist picking them up, and whipping something up with it.
Safe to say, the pasta was so good, especially with fresh basil infused in the tomato sauce. Fresh basil is expensive in Singapore, but for this recipe, it is definitely worth it to get a bunch! Also, don’t skip out on the burrata cheese! Adding burrata cheese is like icing on the cake, the creaminess from the burrata cheese just blends in perfectly with the tomato sauce. But if you not have access to burrata cheese, freshly grated parmesan cheese or your favourite cheese would work as well.

Servings: Makes for 2 pax
Cooking Time: 30 mins
Ingredients
- 2 cloves of garlic
- 200g of cherry tomatoes
- 1 cup/240g of tomato purée
- Pasta of choice (I’m using spaghetti)
- 1-2 tbsp of Olive oil
- Salt and pepper
- Burrata cheese
- Fresh Basil leaves
Steps:
- Peel garlic skin off, and crush the cloves of garlic with your palm. Toss the crushed garlic cloves into a pan with olive oil, on medium low heat.
- Once the garlic cloves turn golden brown on the edges, add the cherry tomatoes and a splash of water. Cover the pan with a lid and let the tomatoes steam inside for about 5 mins.
- Tip: I like to slice my cherry tomatoes into halves, so that they soften quicker and release more juice.
- Once the tomatoes soften, use the back of a wooden spoon to squash the tomatoes and release its juices. Add tomato purée, season with salt and pepper and simmer sauce on low heat.
- In a pot of salted boiling water, cook your pasta according to the instructions of the packaging.
- Once the pasta is done cooking, immediately transfer the cooked pasta to the pan, add fresh basil leaves and a few scoops of pasta water.
- Garnish with a whole burrata (or a scoop of it for single serving), more fresh basil leaves and enjoy!
