This simple tomato pasta is made from such simple and fresh ingredients, and can be ready in less than 30 minutes.
A comforting meal for two (or one), grab a box of cherry tomatoes and make this simple tomato pasta.

Cooking Time: 30 mins
Ingredients
- 250g of Cherry Tomatoes (~ 1 box)
- 2-3 cloves of garlic (sliced)
- 1 big red chilli (sliced)
- 1 cup/200g of chicken stock (can be substituted with vegetable stock for vegetarian option)
- Parsley (chopped)
- Pasta of choice (I used linguine here)
Steps:
- In a pot of salted boiling water, cook your pasta according to the instructions of the packaging. Steps on how to cook the perfect pasta here.
- In a pan on medium low heat, drizzle olive oil and fry sliced garlic and chilli for 2-3 minutes until fragrant.
- Toss in chopped cherry tomatoes and continue frying for 3-5 minutes until cherry tomatoes turn soft and mushy.
- Tip: Cook until when you press the tomatoes, it can be squished and create a sauce.
- Add chicken stock and let the sauce simmer for a few minutes until the pasta is cooked.
- Once the pasta is done cooking, immediately transfer the cooked pasta to the pan and toss it in the tomato sauce.
- Add in scoops of starchy pasta water if needed, to create a sauce which helps to coat the pasta.
- Garnish with chopped parsley and enjoy!
